Grease interceptors are traps that help to stop grease from traveling through your pipes and into the the sewer system or septic tanks. For busier restaurants and butcher shops, there are larger concrete tanks that hold up to 2000 gallons of sludge that have to be pumped out by a company specializing in that sort of thing. These systems can catch roughly 80 percent of the animal oils that are drained out of these businesses. Another device is referred to as Grease Recovery Devices. They are effective at removing close to 99 percent of animal oils. These systems are activated electronically and sweep the sludge of the top of water and into a container that can be removed and emptied.
The fourth device actually uses microorganisms to digest the fatty material to the point that it can safely enter the sewers without fear of causing blockage problems. There can be an automated sprinkling system, that releases the microorganisms, attached to the tank that keeps a regular cycle constantly going to maintain the system.
